I was inspired by Lynn's recipe a while back and used her recipe with a few modifications and was thrilled with the results. Also if you want to see yet another blogger's interpretation of her recipe be sure to check out SnoWhite's version; she really had some great ideas as well!
3 cups rolled oats or multi rolled grain
1/4 cup maple syrup
1 cup milk
2 tablespoons butter, melted
2 teaspoons baking powder
¾ teaspoon salt
2 teaspoons vanilla
½ teaspoon cinnamon
¾ cup canned pumpkin
2 tablespoons brown sugar
1/4 cup pecans, chopped
The night before mix together all ingredients except brown sugar & pecans.
Spread into a greased 9"×9" pan.
Mix together brown sugar and pecans and sprinkle on top.
Refrigerate overnight. Place in cold oven and set oven to 350. Bake 45 minutes.
